Its diversity of arid habitats and climatic conditions acted as an important area for the evolution and diversification of up to 20 (of 38 known) independent Eudicot C 4 origins. Southwest Asia is climatically and topographically a highly diverse region in the xeric belt of the Old World. Hence, Teff is an ideal and healthy ingredient for many gluten-free recipes. Teff has an excellent balance of essential amino acids and is a good source of calcium and iron, which may explain the low occurrence of anemia in areas of Ethiopia where to regular teff consumption. Teff is rich in carbohydrate, fiber and contains more iron, calcium and zinc than other cereal grains, including wheat, barley and sorghum. Teff grain size is known to be extremely small with mean length ranging 0.61-1.17mm and it is considered a superior grain due to its nutritional merits. Thus, the main objective of this article is to review researches on teff, evaluate its suitability for different food applications, and give direction for further research on its applications for gluten free food market. Naturally gluten-free, the grain of teff can substitute for wheat flour and other cereals in anything from bread and pasta to waffles and pizza bases, as well as foods for people with celiac disease. Teff has naturally higher nutritional value when compared to many other grains, and doesn’t need to be fortified. In addition, we indicate the future perspectives of improving this vital crop that feeds 50 million people in the Horn of Africa. In this review, we present some progresses made in tef research and dissemination of technologies to the farming community. The national average yield of tef doubled in the last 20 years due mainly to the increased use of inputs that include improved seeds, fertilizers and herbicides. Since the start of research in tef five decades ago, 35 improved varieties were released to the farming community although only few of the recently released varieties received high adoption by growers. The susceptibility of the plant to lodging caused by wind and rain contributes for significant yield loss in tef. Despite its importance tef produces the lowest yield compared to other cereals due mainly to the widespread use of landraces and cultivars lacking desirable agronomic traits. Hence, tef plays a vital role in food security, nutrition, and income generation to resource poor farmers. Consumers prefer tef not only because it makes good quality bread, but also it is free of gluten for which some people are allergic. Farmers benefit since it is tolerant to many extreme environmental conditions including water-logging and storage pests. The crop is preferred both by farmers and consumers.
